I use Photomatix, and shoot between 3 and 11 individual exposures, rather than extrapolating exposures from a RAW file.
After that though, I just work by feel, until I’ve got the image I want from it. Sometimes, it’s just a matter of exposing the whole image equally, sometimes I look for that really surreal effect that you can get from HDR.
